Tater Tot Casserole

I’m a huge believer in comfort food, and this tater tot casserole is one of my absolute favorites. It’s hearty, savory, and the perfect dish for those nights when all you want is something warm and cozy. Plus, it’s super easy to make!


Ingredients

  • Ground beef
  • Tater tots
  • Veggies: corn, peas, carrots, onions, mushrooms (or whatever you love)
  • Cheese: cheddar or mozzarella are my go-tos, but use your favorite
  • Spices: I’m all about Cajun flavor, so Old Bay, Tony Chachere’s, Creole Seasoning, and Slap Ya Mama are staples for me
  • BBQ sauce
  • Salt & pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Chop up your veggies (if needed) and shred your cheese.
  3. In a skillet, brown the ground beef until fully cooked.
  4. Season with spices, salt, and pepper.
  5. Stir in the veggies and cook until they start to soften.
  6. Add BBQ sauce and mix everything together.
  7. Spread the beef and veggie mixture evenly into the bottom of a casserole dish.
  8. Sprinkle a layer of cheese over the mixture (save some for later).
  9. Arrange tater tots over the top, covering the dish completely.
  10. Bake for about 35 minutes.
  11. Add another layer of cheese on top.
  12. Switch the oven to broil and cook for about 5 minutes, or until the cheese is melted and the tots are golden and crispy.
  13. Remove from the oven, let it cool slightly, then serve and enjoy!

I usually pair mine with a simple side salad to balance things out. But honestly, this casserole is the star of the show!
