Dutch Pancakes
I’m super excited to share one of my absolute favourite breakfast recipes: the Dutch pancake, also known as a Dutch baby. It’s incredibly simple, delicious, and perfect for impressing guests or just treating yourself to a special morning treat.

Ingredients:
– 2/3 cup milk
– 2/3 cup flour
– 3 eggs
– A pinch of salt
– 3 spoonfuls of butter
– Optional (for sweet version): 1/2 tsp vanilla extract
– Your choice of toppings (fresh fruit, powdered sugar, salmon, etc.)
Directions:
1. Preheat Your Oven: Start by preheating your oven to 450°F (230°C). Place your cast iron skillet in the oven while it heats up. This is crucial for getting that perfect puff!
2. Mix the Batter: In a medium bowl, whisk together 2/3 cup of milk, 2/3 cup of flour, and 3 eggs until smooth. Add a pinch of salt to enhance the flavour. If you’re in the mood for a sweet Dutch pancake, go ahead and add 1/2 teaspoon of vanilla extract to the batter.
3. Prepare the Skillet: Once your oven is preheated, carefully remove the hot cast iron skillet. Add 3 generous spoonfuls of butter to the skillet and swirl it around until it’s completely melted and coats the bottom and sides of the pan.
4. Cook the Pancake: Pour the batter into the buttered skillet, ensuring it spreads evenly across the bottom. Place the skillet back in the oven and bake for 18-20 minutes. You’ll know it’s ready when the pancake is puffed up and golden brown.
5. Serve and Enjoy: Remove the skillet from the oven and let the pancake cool for a minute or two. Slice it up and add your favourite toppings. I love fresh berries and a dusting of powdered sugar, but the possibilities are endless!
