Currently, running out of a food trailer outside île Sauvage Bewery, it’s truly a gem worth writing home about – or screaming from the rooftops whichever is more you – and believe me, I’m not exaggerating. The sandwiches here are nothing short of phenomenal, each sandwich is dripping with flavour.
Bangers, a brainchild of the talented Victoria, has served up delicious out of various kitchens and collaborated with local breweries. Which has amplified their culinary prowess, resulting in an unforgettable dining experience of consistently delivering mouthwatering Southern-inspired dishes.
Bangers specializes in Oklahoma Smash Burgers, Fried Chicken Burgers , and Tallow Fries—a trio that already sets them apart. Every bite is indulgent, bold, and impossible to forget.

I had the privilege of chatting with owner Victoria, delving into the intricacies of the Bangers’ culinary journey so far:
What made you start bangers?
After 20 years on and off cooking for other people, I felt it was time to go on my own. I’ve always had a passion for cooking and wanted to bring something to Victoria that new and fresh.
Why the name?
Have you ever heard a really good song and say “that’s a Banger” or something you really like “it’s a Banger” well that’s how I chose the name!
If you could pick one song as a theme song for Bangers what would if be?
There are a lot that come to mind that represent the food I cook, however “Electric Worry by Clutch” is a song that reminds me of when I started this as a pop up and getting hyped about the possibilities.
What sets your sandwiches apart from others?
There are a lot of fantastic sandwich shops in town. I think the flavours I come up with are unique and I have a southern flare which adds something different.
How do you source your ingredients?
I shop local and support local. For example, I source our pork from Berryman farms here in saanichton.
If you could only eat one of your sandwiches for the rest of your life, which one would it be and why?
Oooooh, tough question and totally mood dependent. The El Originale was the very first creation, I love spicy and I love chimichurri .. so that would probably be my go to. However, since making the Smash Burger, I would choose that 7 days a week.
What inspires you the most to create new menu items?
I get bored and fast.. with most things in life.. this gives me a creative outlet. I also love food and when I’m craving something, I think other people will too, so I make that!
If you could create a sandwich inspired by a famous person or character, who would it be and what would be in it?
Frank Sinatra all day long … it would be a Sirloin Steak Sandwich with horseradish aioli, chimichurri and fried onions on it
What is your 1 & 5 year goal for bangers?
I’ve surpassed my goals for the first year. My 5 year goal is to have a proper Texas style dive bar here in Victoria.
What advice would you give to aspiring food entrepreneurs looking to start their own pop-up ventures?
Do it, quit the job if you can and do it. Reach out to people who are doing the same thing or have done a pop up … everyone here wants to help! Sam and Johl from Benjos, Julie from Hero and David from Stage gave me positive reinforcement to not stop.
If you could have a sandwich named after you, what ingredients would it have?
Buttermilk Fried Chicken, pickles, slaw and secret sauce. Simple but the ingredients used would have depth and complexity to it. Savoury and wanting more.
Tell me a bit about the people behind Bangers:
I started this up on my own with my life partner, Dallin, behind me every step of the way. He gave me the opportunity to quit my job so I could pursue this full time and really focus on the direction of the business. He’s my rock. He allowed me to chase my dreams full on.. he’s a gem and I’m incredibly lucky to have him in my corner supporting and rooting for me/us!
Other than Dallin, my sister was extremely supportive helping with the pop ups as I couldn’t afford to pay anyone. She believed in the idea and showed up.
My dad was the voice in the back of my head constantly saying “don’t take your foot of that petal” even when there were zero dollar days.
